Farmer’s Market Greek Salad

Ingredients

  • 1 tsp extra virgin olive oil
  • 1 tsp garlic, minced
  • 3 cups green beans, washed, trimmed and halved
  • Sprinkling of sea salt
  • 2 medium cucumbers, washed, ends removed, cut into 1″ pieces
  • 2 cups cherry tomatoes, rinsed and drained
  • 1, 9.5 ounce jar pitted Greek Kalamata olives, rinsed and drained
  • 3.5 ounces reduced fat feta cheese, crumbled
  • For the dressing:
  • 1/4 cup extra virgin olive oil
  • 2 Tbs red wine vinegar
  • 1 tsp garlic, minced
  • Sprinkling of sea salt
  • 1 tsp dried oregano leaves, crushed
  • 2 tsp dijon mustard
  1. Heat olive oil and garlic in a sauté pan on medium heat. Add green beans and sauté for 6 to 8 minutes, stirring often, until the green beans are a vibrant green color, slightly browned and crisp. Sprinkle with sea salt. Remove from heat and let cool completely.
  2. While the green beans are cooling, prepare the cucumbers and add them to a large serving bowl. Add tomatoes, olives and feta. Add cooled green beans and mix to combine. Place in the refrigerator to chill.
  3. To make the dressing, whisk together olive oil, red wine vinegar, garlic, a sprinkling of sea salt, dried oregano leaves and dijon mustard in a small bowl. Pour over chilled salad and stir to coat evenly. Serve chilled.

This recipe is low in cholesterol and high in fiber, vitamin A and vitamin C.
